Why? Because despite its name, it is in fact a rockfish – something you can quickly see when encountering it whole at a market.
After sustainable fishing practices were put in place and foreign vessels, which once dominated the fishery, were prohibited—the once-depleted fishery recovered from overfishing.
Improved management, an excellent observer program, and perhaps higher productivity in Alaska have allowed the stock to recover to a level which can allow about 26,000 tons of catch per year.
Lean and firm flesh, with a delicate nutty flavor.
